Delicate goodness!

For marinating our fillets we choose only the best: the fresh fish flesh, manually cut into small, is marinated with apple-vinegar from Trentino region, iodized sea-salt, peppercorns and precious spices, using oil as the only natural preserving agent.

A more strongly marinade is used for trouts, while a lighter one is used for chars, because of their particularly delicate flesh.

We preserve our marinated trouts and chars in small jars in oil, as the only natural preserving agent, without any addition of chemical additives, ready to be served in the best restaurants, fish shops and gastronomic shops.


Peculiarity: after cutting into small cubes, the fish is let to hang and then to stand in the cell for a whole day to make its texture more delicate.
