In each phase of processing, all the artisan experience

Once reached the ideal size, the fish is ready to be caught and immediately processed. We carefully check all the processing phases – – filleting, salting, smoking, marinating – until final packaging.

Smoked fillets are vacuum-packed, while marinated trouts and chars are preserved in oil, without any addition of chemicals or preserving agents, ready to be served in the best restaurants, fish shops and shops for local products.
