We collect trout and char eggs only between the months of November and February, using a method that safeguards the fish. Raised and fed in a natural way, the fish producing these eggs are between two and three years old.

Our trout roe is produced by hand. With the salting exacted in this way, the fish is preserved naturally without any dyes or preservatives.

Crunchy, bright red in color and with a balanced taste, these trout pearls are an excellent alternative to traditional caviar.

Ready to be served and enjoyed, it is ideal for refined appetizers.

To be eaten raw, accompanied by a glass of bubbly, it is delicious on crostoni with fresh butter, to garnish canapés and first course fish-based dishes. With its savory, balanced taste, it makes for delicious, refined dishes.
